Pistachio Kernels

Harvested before the nuts reach full ripeness, while the outer hull is still light green; the hull is removed, the nuts are dried and passed through cracking machines to separate the hard shell, giving us green (boz) pistachio kernels.

Its distinctive features are an intense pistachio taste and aroma and a deep green colour. It is mainly used industrially — especially in baklava, desserts, cakes, ice cream, Turkish delight, as a flavouring in some foods and in regional dishes — and is also enjoyed as a snack.
